    Dango / Nak-kee~ Boiled Chick Peas

    Serves 12

    A simply yet elegant dish, Dango is full of flavour, but the secret is to soak the chickpeas well, otherwise the cooking time will be extended.
    Popular as an afternoon dish, it is served with sliced limes, in individual bowles and scooped up with bread or eaten with a spoon.

    3 cups dried chick peas
    1 1/2 teaspoons bicarbonate of soda
    Salt for taste
    6-8 dried red chillies

    Soak the chickpeas overnight, with the bicarbonate of soda, making sure they are well covered.
    The following day, wash them, put into fresh water, add the salt and dried chillies, then boil gently for over an hour until they are tender, adding water if necessary. Eaten cool or warm.
