Sago ~ Tapioca PuddingThis is the original sago pudding which has beeen served in local homes for generations. It is simple to make yet its flavour belies that simplicity. By adding the sardamom and saffrom, the pudding acquires a lightish green shade.
1/2 cup sago Soak tapioca in water for 30 minutes. Place tapioca, water and sugar in a saucepan and bring to the boil. When bubbling, reduce heat and add saffron and cardamom and continue simmering until slightly thickened. Remove from heat and add the rose water then pour into serving bowls. Chill in refrigerator until ready to serve.
