Fir-nee ~ Ground Rice PuddingResembling the cornflour pudding, with a similar flavour, the ground rice makes for a thicker consistency, and therefore it makes a richer dessert. Very popular during Ramadan, it is advisable to refrigerate just as it has cooled but it can also be eaten at room temprature. This is a traditional local recipe.
6 cups fresh milk Put milk in a medium saucepan and slowly add rice flour and sugar, stirring until smooth. Whisk a little to aerate and bring to the boil over a low heat, stirring constantly. Continue to boil for two to three minutes, remove from heat, blend in the cardamom, saffron and rose water, whisk a little again, then remove from heat and pour into one dish or individual bowls. Decorate with pistachios and eventually refrigerate.
