    Lemon Bread Pudding ~ Custard ma loomi

    Serves 8-10

    Essentially a modern dish, but with its roots in the past, this 'convenience' recipe was given to me by some of the girls at UAE University. Very easy to make, the ingredients can be doubled without any problem, to serve a large number of people. The dessert resembles a lemon mousse, but is much richer. 1 small loaf sliced white bread
    2 packets creme caramel
    6 tablespoons sugar
    1 teaspoon lemon extract (essence)
    4 cups milk

    To Garnish:

    2 small cans cream
    1/2 cup chopped pistachios
    glace cherries

    Remove crust from bread. Boil milk, creme caramel and sugar and continue boiling for two minutes. Remove from heat, add lemon extract. Layer the bread, pouring a little of the milk mixture over each layer, until bread is finished. Pour remaining milk minture over the top. Leave to cool and place in a refrigirator to chill.
    Once it has become firm, whip the cream, pour over, then sprinkle the chopped pistachios and cherries over the top. Keep chilled until ready to serve. Cut into squares and place on small tea plates.
    A very modern dish which is sure to become a classic for future generations.
