    Samboosa ~ Fried Savoury Triangles

    These savoury triangular-shaped pastries are probably the most popular in the UAE. Again 'imported' into the UAE kitchen from india, they can be filled with vegetable, chicken or meat mixtures following the basic recipe.
    Making samboosas at home can be time-consuming, and these days, large quantities are made and frozen in batches to deep fry when needed. They are however, available in the many small Indian resturants around the Emirates and are popular as an any-time-of -the-day snack, and a particular favourite during Ramadan.

    2 1/2 lbs (1.1 kg) cooked, minced beef
    2 lbs (900 gms) sauteed chopped onions
    2 bunches fresh coriander
    2 cloves garlic
    2 teaspoons loomi
    2 green chillies
    Salt to taste
    1 tablespoon bezar
    1 tablespoon turmeric
    1/2 teaspoon cinnamon
    1/2 teaspoon cardamom
    1 cup peas (frozen)
    1 packet samboosa wrappers
    oil for frying

    Mix all ingredients together and taste for seasoning and adjust accordingly. Put a little of the mixture into the middle of a samboosa wrapper and fold over tightly. Seal the edges with beaten egg. Fry in hot oil and drain on a paper towel.
