    Laban~ Fresh Buttermilk

    In the remote areas of the UAE, a large jug of freshly made buttermilk is served with every meal. The Bedouin drink it with their food and pour it over their rice to give the food a sharper flavour as well as to help in the digestion process.
    It is the drink which is used during Ramadan to break the fast each sundown. Sipped slowly, it helps revive the digestion process after a long day without food and drink. It is served with dates during Ramadan.

    6 cups fresh yoghurt
    3 cups mineral water
    1 teaspoon salt
    1/2 teaspoon dried mint

    Place all ingredients into a blender and whisk on "high" for 30 seconds. Taste, and if required, add a little more salt. Chill until ready to serve.
