    Cho-bab ~ Crepes

    Makes 12

    This traditional Bedouin bread is very similar to the American crepe. This ingredients are the same as khameer, only more water is added.
    Once Cho-bab is cooked, fresh samen is sprinkled or drizzled over each. Served at breakfast or dinner accompianed by cheese, honey, eggs, jam and fresh chami. Eat with the right hand.

    2 cups wheat flour
    2 cups all purpose flour
    3 eggs slightly beaten
    1/2 cup sugar
    1/2 cup milk powder
    1/2 cup corn oil
    1 teaspoon yeast
    4 1/2 cups warm water

    Mix all ingredients together - today's modern cook would use a blender for a very smooth consistency - cover and keep in a warm place for 2-3 hours.
    Cook small amounts in a frying pan on medium high without oil until golden and lightly bubbling. The cho-bab should resemble thin crepes. Serve warm.
