    Sharab-el-ward ~ Home-made Rose Syrup

    Usually offered when guests arrive, this is a refreshing cold drink which should be served in tall glasses with ice cubes and a sprig of mint.
    It can also be used as a syrup for fresh fruit salad and is particularly popular served this way at Eid, or on special occasions such as a wedding. It offers an exotic touch to the fruits.

    1 cup water
    2 cups sugar
    2 1/2 teaspoons rose water
    few drops cochineal (red food colouring)

    Boil sugar and water, then stir in the lemon juice. Continue boiling until sugar is completely dissolved. Drop the red food colouring and rose water in slowly and continue boiling for a further three to five minutes. Store in glass bottles and dilute when necessary.
